It is easy. Very easy. Fool proof if you swap the entire harness from headlight to tail light. But like most of us said, its VERY time consuming. I did mine in a total of about 2 weeks spread over a period of time but i had quite a bit of wrenching experience before hand. Most of the work is in getting the old harness out and the new one in. Dash comes out, interior comes out etc etc.
The deciding factors should be-

1.Do you have the time?
2.Do you have the patience?
3.Do you have any experience with large scale projects?
4.Are you ORGANIZED?-very important
5.Do you have a secured garage or covered driveway that you can leave the car in a disassembled state for a extended period of time?

After having done it myself. . . i say leave the NA car NA. Go buy a turbo car that came turbo from the factory.

You did the entire car harness? I feel your pain. You and I are about the only people to swap entire harnesses.

Screw swapping the entire harness.
I built my own harness to begin with, and I do not need to do that. I can't imagine it taking more than two days for me. But, I am a skilled mechanic with all the tools, and experience. I know I can have the old engine out in less than an hour easy. But only if I have a place to do it. My car is already stripped down compared to a 280ZX from the factory.

Yea i swapped the entire thing and it was not hard at all, just took a lot of time and some skin off the knuckles. Car started right up though with only the issue being i had installed the AFM backwards due to the fact that for one, i didnt pay close attention and (B) the NA engine bay doesnt have provisions to mount the turbo AFM. And so it idled but would not rev. . . fixed that pretty quickly though

As for our Z friend Gostlrs- obviously if the guy has to ask how hard the swap will be his wrenching experience with his Z is limited. So with that in mind- If you are so inclined to do the swap, which i advise against, I would definately recomend swapping the entire harness to elminate any chance of wiring issues. No splicing, cutting or stripping of any wires anywhere. Just "plug and play" so to speak.
