Really dumb question...I just pulled the plug from the MAF sensor and it is covered in grease on both sides of the connector. Should it be?

Absolutely not - grease on electronic connectors is a no-no contrary to the wives tales out there. Yes it will keep water out but it reduces the current carrying capability of the contacts. If your connectors are corroded replace them. The newer connectors have seals to help keep water out.
