Engine light... "Water"?
Okay. The little red light in the center of the console, is what Im going to assume is the CEL. When I press the "check" button it says: "Water".
What is this? I have plenty water in the radiator and washer fluid.
The car is an 83' 280zx turbo.

no, the sensor is in the overflow bottle, not the radiator itself. The sensor is activated by the thick ring that floats on the shaft. If there is enough fluid in there to keep it off the metal stop at the bottom then you won't see the warning. Just put some water in the overflow bottle. My bottle has a small leak in it, but the radiator is new. I just see the error all the time and ignore it.
If I wanted to fix it, I could rig up a custom overflow bottle.

It's probably a faulty sender. I had the same thing except for my windshield washer reservoir. Kept saying it was empty, but the thing was full! I think you just need to replace it, that's all.

check water
I had the same problem on my 82 280z...I kept filling the water to the top of the radiator....still didnt work. Finally I took my radiator into a shop and had it cleaned out....PROBLEM GONE. I dont know if the sensor gets stuck but my radiator had lots of sediments in it....it only cost me about $80. and I dont have to look at the light anymore.

figured out the headlight problem...seems theres a fuse for EACH headlight......if i take one fuse out......right HL gets dim...and with high beams even dimmer......if i take the other one out and put the first one in....the other one gets dimm and dimmer with high beams on... i didnt know there was 2 fuses for each light!!
