This is not an easy task!
I broke the cable on my '72 240 4(?) yrs ago........
We had to slide under the car with a flashlight, looking behind the engine from the drivers side, past my header etc. we could just make out the small "tab" that you have to push. it is almost centered almost directly behind the valve cover.
The lever is of course in the middle of the latch plate... inside a box almost! its crazy, but it can be done. the lever, will pivot towards the drivers side. put your finger in the side of the latch "box". you will feel the lever..pull towards you.
Good luck!. this is a real A-hole to perform.... I left my hood open to the first safety latch for several years after I broke that sucker! (paranoia)
.. Uh one last thing. I feel the need to mention that I am a small guy. 5'5" an' about 110 pounds.. I can get my puny hands up there to the latch... a larger.. err "normal" sized human, may find it even more difficult... got a skinny G-friend?
Good luck ... Todd/BC240Z

If you can get the car on stands. you WILL be able to get under there.. IF you have long-*** arms.. you WILL be able to trigger the release.. gosh man, dont chop it up!!!
I managed several times to open mine, when 'tard's would close my hood alla-way without asking!
.. I finally rigged a choke cable to work, one day I will replace it with the proper piece/Cable.

here is a clip from the JTR v8 manual hope it helps
Install the hood latch and cable. The hood latch bracket (page 2-f f) is installed on the lower side
of the firewall bracket (page 2-1O). DO NOT SHUT THE HOOD UNTIL YOU ARE SURE THE
CABLE OPERATES THE RELEASE MECHANISM PROPERLYI Otherwise, the hood will not open
and there will be lots of swearing. If thls should happen, the front of tJle hood can be unbolted
from the front of tJle car to gain access to ttre latching mechanism with rrlrrimal body damage.
