Lots of fun there! If you are good w/ a welder and know how to bend / shape / work sheet metal... get to work. My floors weren't quite that bad, but I just cut out the bottom & fabbed up a more simple pan, zapped it in, painted it, then undercoated it.
Not the best pic... but the black area on the left side is a new floor pan (2 pieces... 1 outside, 1 inside):
I have a pic somewhere of a 280zx I owned that had no floorboards at all... just a big hole from the pedals to the seat. I just got some sheet metal, pounded / massaged it into the shape of a floor pan, and welded it in. Granted... I worked in a body shop for a few years, so it took a lot of time to learn how to do it.

Beat them? You could prolly push them back into shape w/ your hand.
Replace them? Meh... if you are doing a complete resto to look like it just came from the factory, yes. Otherwise you can just beef them up by welding in some angle iron supports.
Your questions are good, but before I end up explaining how to replace every piece of the body, I suggest you do some research on body work.
