Electric fans won't always cool better, but there might be some reduction in direct engine load (especially when the fan clutch gets hot).
My somewhat modified L26 (cam, extractors, 240 carbs, some internals) runs best at exactly half way on the gauge. It never gets over half when driving and only gets hot idling if the water level is low (taking reading from steam isn't good
I run 98 octane fuel minimum as Aussie fuel is crappy generally and I have also removed most of the heater hoses as recommended by my local z guru.
my L28 (in an 82 zx) almost never reaches halfway, i'm not sure but i think the radiator is larger in the zx?

The middle of the gauge is the area you want to be in. Different thermostats will keep the temp at different degrees. One may be a 180 and the other 195 F.
If your radiator is good enough to keep the engine cool, then the thermostat will be able to hold the temperature at that level even under harsh driving or very hot weather. If the temp goes over that level, then either your thermostat is going bad, or you need a better radiator/fan setup.
In a hot environment, it might be best to run the 180 deg to keep the engine on the lower side. In a cold area, the hotter thermostat will help keep the engine warm and give you more heat inside for your heater!
