Intake
You dont have to take off the exhaust manifold, but you will have to remove the heat shields located underneath the intake, the bolts that hold them in place are usually pretty rusty and strip very easy so be careful use a long extention and they are easily accesible but this will loosen the exhaust so a new gasket might be needed. good luck

Absolutely right. I just took my intake off to remove the head for some machine work. Those bolts, depending on how old the car is, are very weak. I bust a head bolt and about 4 or 5 other bolts. A couple were on the intake. You may not be able to avoid this, but be careful nonetheless.

I think three or maybe four of the underside intake manifold bolts have thick washers under them that hold both the intake and exhaust on.
You need to remove those, but that still leaves several exhaust manifold bolts in place so you do not need to remove the exhaust manifold. However, if you take off the intake you may not ever get the same quality of seal on the gasket. To replace the gasket obviously requries that both manifolds be removed.
