Your car is dieseling. That is common for cars with a carb. That usually means that your engine is running very good and has good compression so it still sucks in a small amount of fuel fromt he carb once you turn the engine off. Just the compression alone is able to ignite the fuel but only for a couple seconds. It shakes becuse it is running on only a few cylinders and at very low rpm. Its nothing to worry about. You can kill the engine with the clutch right when you turn it off if you want. Some carbs have an anti-dieseling solinoid.... I'm not sure if the 240Z had that.
