Make sure your motor mounts are in good shape Dont want that sucker torquing over into the bar. Just keep a fire extinguisher in your car and you can follow s/c's advice I'd personally make a little clearance if it's that close. Vibration alone can take up 1/16". Just take a dremel to the underside of the bar and shave another fraction of an inch out to be safe.

start the car, rev it, does the motor hit? Or jack up the rear , use 2 jack stands, start and rev while watching. You might need another person. But that will atleast put the motor under some load. If it hits while doing that, then it will certainly hit while driving. Or a small piece of material that indents easily, tape it in between, go for a ride, and if you see a indent or crushed, then you know it hits.

Fuel Line Clearance

if you want to see if it will clear. have someone put the car in gear, foot on the brake and bring the rpm's up about 2500. the motor will twist on the mounts same as hard eceleration. if it does'nt hit then it prob won't while driving.

Well, that is another way to find out. Way more simpler than any of the others.
