Overheating
I recently installed a wild cam and springs, extractors, twin webers, port and polish, high performance coil and wires on an N24 head with L28 block on a 280ZX.
However the engine is running very hot, reaching the middle of the temperature guage (this never happened before)
Also the gasket for the extractors keeps blowing.
Any suggestions.

if it's running that hot, try going with a lower temp thermostat, or none at all, thats what i did when i upped my boost and had an overheating prob, now it runs as hot as it used to (which is on the cool side, about 1/4 of the way up on the gauge)

The temp gauges in Z's don't work for crap. Get a good gauge and see for sure if you engine is running hot. I had the same problem and scared the crap out of myself thinking my engine was hot, but it was just running normal.
