I would think all the rubber would be suspect, not just the hoses, but tires and bushings as well.
In addition to fluids (it might not be a bad idea to drop the gas tank and get it cleaned out before new gas is added) you might want to replace all filters and gas lines whether its needed or not.
A new battery wouldn't hurt either. Then check and clean or replace the distributor cap (the plastic degrades and they crack), points, plugs, spark plug wires, etc.
Flush the radiator real good too. There will more than likely be a ton of crap in it.

remove the spark plugs and put some WD-40 or engine oil in each cylinder. A couple spoonfuls I guess.
Put a big socket on the front of the crankshaft and slowly turn the engine around a few times to get some liquid on the rings

I'd add to the above very good replies that you should be sure to inspect the rubber flex lines on your brakes and test them before moving the car. Jack it up, spin the wheel(s) by hand, hit the brakes and see that they stop. The calipers and cylinders may have gotten good and stuck in their position in the last 18 years. Finding that out when you first head down the street in your great find would not be the best time.
