Made up some stainless steel headgaskets. 1.5 mm thick, flat within .0005

Just curious.... are those machined or water jet? Does flat to .0005 matter as long as the head and block are true?

Thats deffinitely just water jet or laser, most likely water with the look of the edges. Curious, how do you plan on keeping these from moving? Copper sealant? What kind of block and head finish is recommended for a SS HG?

The .0005 flatness does not matter that much, that's how it comes from the mill. However, if you have irregularities greater than that in a small area there could be problems under high boost around the combustion chambers. The head and block together should be flat within .002 overall with no dips or bumps that can't be sealed with copper spray. In addition the head should be torqued down with the block on a bench not an engine stand. The copper allows the block and head to move under temp changes without losing seal.
And yes, it's done on a waterjet.

The gasket has approx 8 rms so your head and block need to be 32 -64 to allow the gasket/sealer to move enough to follow temp changes.
