'75 Air Hose, flow meter to throttle chamber

Either they sent you the wrong one or you ordered the wrong one. The throttle body changes for different years and weather or not you have a california model. Some have the valve cover vent in the bottom of the throttle body. The boot they sent you sounds like it was meant for that type of throttle body. What you need is a boot like a 1981-83 280ZX has. if you can exchange it, I would do that.
Don't vent the valve cover into the engine compartment and don't plug it.

You got the right part, and sounds like you corrected the problem.

Too many times the older cars have been modifed by shadetree mechanics and it gets confusing trying to straighten them out.
