That would be sweet... I just don't know **** about bikes in general and need to start learning...
Like what models are most common choppers? And do people usually start witha bike and then start the modding process or do they buy frames and engines and go from there?

Most start with a bike, but if you have the time and money...i'd get kit and put it together yourself. That way you learn your bike. I have a "how to" series on dvd that explains and shows you how to put together a kit bike if you want to borrow them sometime. That also might help you decide which route you'd like to go.

http://www.bigbearchoppers.com/ My friend built a bike off from them , they can sell you everything you need . It just needs assembly and paint. I also have a great painter that loves to do custom choppers.

OK, so I went down to Sinister Cycles today... They seem like good people. They gave me a bunch of catalogs to browse and gave the number of someone from the Harley Dealer on Eastern.... They recommended that I start with a softail because it will open up the possibilities of what I can do with it as far as parts...
Any thoughts...?

It honestly depends on what you are looking for. What kind of bike are you hoping to end up with? The reason why i'd start from scratch is because you get everything you want from the get go, so you're not having to customize this and that...etc. I like drag looking choppers with a fat rear tire, so it would take me quite a bit to acheive if I bought a factory bike. If you did go with the kit bike, I'd love to help out!

I am not sure if I would want to take on such an ambitious idea though. It would be fun as hell and I could learn a ton, but i don't really have the space or the tools to build a bike from scratch.
I did however order there dvd so I can see exactly what is involved and how long it takes...
I might take a trip to one of their dealers showrooms as well...
