Cooling ?
When I drive on the interstae averaging about 85MPH at 3300 RPM my temp hovers around 200. When I am racing the car thru a canyon at higher RPM,s the temp drops to about 180, and while in stop and go traffic it also sits at about 180. Does anyone have any idea why? or should I just accept the fact and move on.

It could be that you need a better thermostat. Are you using a Nissan unit or one off the auto parts shelf? The Nissan units have a larger throughput, so when they do open up they allow a larger flow of coolant.
