Don't know about the Z31 (I'd suspect same as your old one), but the Z32 doesn't do as well. Expect less than 20mpg. And why are you looking at sports cars if you're concerned for gas mileage? If you want economic, it won't be sporty. If you want sporty, it won't be economic... that's just how the world works.
Personal experience
I have a 95tt and get 24-26mpg on straight highway driving and 18 around town, usually about 290-310 on a tank 13.5 gallons fill up or 59$ or so...figure that's about 19 cents a mile. The new Altima gets closer to 32 miles per gallon and a range of 550miles on 16.75 gallons about 67$ or 8 cents a mile.
4.00$ used for regular unleaded
4.35$ used for premium unleaded
say 15,000 miles per year anual driving
each car: 2850$ for the Z and 1200$ for the Altima
Take that under consideration if you are on a budget
other fun numbers:
1080$ per year on cable TV
720$ on cell phone
64$ AAA membership

A Miata is as sporty as a convertable Geo Metro.
a 300+ horsepower TT is not the same sporty as a Miata.
If you put a turbo kit on a Miata, it won't get 30mpg.
If you want an ecinomical 300ZX, put a non tubo CA16DE with a RWD 5-speed in it and drive it easy.

A former-TT-now-Miata owner on tt.net says that he gets worse mileage with his Miata than his Z.
Mini Coopers are not sporty, they have 118bhp. The Mini Cooper S is more sporty, but only 172bhp and the mileage drops (big surprise). The Mini Cooper S and Miata are borderline exceptions to the rule because they're not fast by means of being powerful, but rather by being lightweight.
One cannot reasonably argue that a high-performance version of any car will get the same or better gas mileage than a non-high-performance model... and that exemplifies my statement that sporty and gas mileage are inversely related. The more performance, the worse the mileage.

well, a miata is a... little more sporty then a geo lol. but true, it's not that great, and your statement is well justified zlover. i think the guy that got rid of his z for a miata has a pretty messed up miata though... that doesn't sound right at all

I've driven both the Miata and Minicooper S
But not on a track, they are both such small cars the road looks and feels so wide. The 6 speed in the Mini just feels like a waste, always shifting...
I've also owned a few 600cc bikes and if you want one that isn't super sporty take a close look at the YZF 600r. I got about 40mpg with it and its maintenance was light on the wallet. The Triumph Daytona was also a fun ride and handled a lot better but it has a much more aggressive rider position and not so good for shorter people.

that yzf 600r seems to be a bit more pricey then the suzukis and kawasakis that i'm looking at. and what do you mean it isn't sporty?! very comparable to a gixxer.
and i wouldn't consider a mini or a miata to be very gay. i don't particularly like either of them very much, but i've seen very likable examples of both.

thanks for the suggestion, but i looked it up and if i were going to get 40 mpg, i'd just get a gsxr600.... i like it though. right now i'm stuck on gs 500's. i like them a lot. that is one of my favorite looking bikes and i won't be tempted to go too too too fast with it. or i won't be able to rather

If you put a yzf600r next to an actual Race sytle bike, i.e. daytona 675, gsxr650, R6, or the 600rr you will see a BIG difference. I am not talking new, DO NOT for your FIRST bike get a new one....it will only lead to heartbreak. Oh, and if you think a 500cc bike will get you into less trouble you don't watch a lot of motorcycle racing on TV do you?

You can break any speed limit on a 250 ninja. But that's no fun.
As long as you have a brain you can start on a bigger bike. You have the same ability to die on any motorcycle because of the lack of a cage around you.
I started on a 900cc. Rode dirt before that. Put a ton of miles on motorcycles in the last 5 years. So far so good.
But, there are two kinds of riders. Those that have wrecked, and those that will wreck.
I get around 31mpg now on the hwy while cruising.
But, if I am on it in town, I get around 12...
The triple webers tuned are doing great. But, they suck the fuel down when you want them to.
