86 NA radiator coolant questions

My 86 2+2 NA is only taking about 2 jugs of 50\50 coolant After I changed out my headgasket ( the size of an antifreeze jug escapes me). I am sure it is supposed to take more than this. Is there a bleeding process or something that I am missing?
Another thing, I am not sure if I can trust the temp sensor on the digital dash. I have an anolog temp sensor comming off of the top radiator hose(the one that goes from the elbow to the top of the radiator) and while it will show 210 the digital one shows 250 (which is when I pull over).

Any help is appreciated
Thanks

Had you completely drained the block and radiator? What about the heater core?

The block and radiator were completely drained, but not the heater core. I am beginning to think that the car isn't really overheating because it has not lost any water nor have I seen steam or heard it boiling which i would hope would happen when the digital temp gauge reads 270. I have also checked my antifreeze mix which checked out.

On a side note, the other day I ran some radiator flush through the system after flushing it multiple times before and after putting it through.

Thanks for the reply
