Just look at it like chunky beer They use the same process

I should mention that I am a strong advocate of not eating sauerkraut due to the potential health risks involved.

sauerkraut: made from onions or something like that.. cut up, and just let it fester or 'rot' for a certain period of time. That's all.

Hmm, that said, I still like the 'kraut. Just has that tangy something, added to it.

what kinda sourkrout is that...its made from cabagge....you let is "sour" up and it tastes so damn good!
my parents always make sourkrout...you gotta know how to make it else it wont come out good at all!!!
you gotta find the right cabbage too...all you do is cut out the middle core...put salt in there....stack in a barrel (not plastic as plastic keeps odours and you dont want that!!) then top up with water and make a lid (my dad makes a wooden lid usualy) as wide as the inside diameter of barrell and put a heavy weight on top (not metal RUST!!!, we usualy found a huge rock to put on top) and let it sit in a cool room, not too cold not too hot...again its gotta be done right to taste good!!!!

Yup beer is made by fermentation. Sauerkraut is made by fermentation. Which is really just a glorified word for aged, which is just a nice way of saying, well...something really nasty. Basically, for the same reason you would throw any other food away, is how sauerkraut is made. Just mix shredded cabbage with salt and cover with water. Then seal it up in a glass or ceramic (non porous) container. And it's got to be air tight or else it will start to mold. Though I can't see how eating mold would be anyworse. The absence of air and the addition of salt is basically all that keeps sauerkraut from ROTTING while its "brewing". But hey, none of that has anything to do with why I don't eat it. I just plain dont like the stuff.

MMMMmmmm, aged cabagge just short of rotting due to the lack of air and the addition of sodium chloride. Sounds tasty . . . .
