I have an 80zx, I pulled the FI off, and installed triple webers on an E31 head. I dont think the carb manifold will fit on a FI head without modifications, but if you are a machinist, you might be able to do this, The car runs so much better, and sounds so much better, of course when I added the bigger cam it really came alive.
I had to intstall a new fuel pump that was a low pressure one, but used the same lines, and just blocked off the return line. Everything else worked fine. The ignition remains unchanged, but I need a hotter system now because of the increased fuel and compression. I also had to run a header because of the different head and intake system,, altogether the car runs really strong. I also have a 280 cam, with 2 1/2" exhaust system. The car runs 140+, but gas mileage is awful!

I think the manifold on your the manifold will be fine on the 78. I don't think you'll have to get another head. Might want to check with a local Z mechanic, but I was told it would work. I plan to put dual Webers on my 77 also, and if I have to do the whole top end it isn't worth my time.
